I decided to go simple and cook a couple of NY Strips.
BEFORE…

DURING…

AFTER…

The trick is to sear them for a couple of minutes at about 750 degrees each side and then close all of the dampers down and let them bake until they’re cooked to your liking. Tonight’s steaks were unbelievably good.
